Culinary advice from a super pro
What an honour it was to cook with Chef Ann Nolan, head chef at the World of Whirlpool (which makes Jenn-Air, KitchenAid, Whirlpool and Amana brands) Culinary Centre in Chicago. Besides getting the chance to cook on the sexy beast induction cooktop shown above, I learned a ton of tips and ticks from her. Because I’m the generous type, I’m going to share. - Liven up your serving platters by spraying a vegetable spray on
the platter. You can spray dots, straight or wavy lines or arcs. Then take
pepper or an herb, preferably one used in the dish you are
plating, and sprinkle on the marks. It
Freezing fruit for a later date? Take washed fruit and lay on a small cookie sheet with sides or a cake pan. Place in the freezer for about an hour until frozen solid. Remove from freezer and place pieces of frozen fruit in a ziplock bag. Once frozen, you can take out of freezer as needed.
Want to add just a teeny tiny bit of buttery yumminess to your food ? Chef Ann keeps a stick of butter frozen in the freezer, using a microplane or a cheese shredder to grate a small amount on food. You get the fabulous flavor - but not all the calories.
Blanching veggies for crudites platters and stir-fries sets the color and softens the raw flavor. Place your clean prepared cut veggies in a pot of boiling water for less than a minute - just until the veggie turns a bright color. Remove and immediately plunge in ice water. Let set for a minute and remove from ice bath. Place on a paper towel to absorb water.
- Add lemon to all your fruit recipes. 3 tsp. on fruit will brighten the flavors to intensify it.
- Always rest meat/proteins once they are removed from the heat source. The meat is tense when it comes off the heat and if you cut into it, the juice will run all over and you in turn have a dry piece of meat! Let rest for at least 10 minutes, so that the juices will redistribute throughout the meat. Turkey can rest for up to 45 minutes with a tent of aluminum foil over it.
